Speck is a speciality of the Tyrol. Cured with a light crust of salt flavoured with pepper, juniper, rosemary and bay, authentic speck Alto Adige PGI can be made only with lean, firm pork thighs from renowned farms.

It is fabulous eaten simply sliced as antipasti, or use it in cooking in much the same way as you might use pancetta or bacon.
